homebrewing, and the joys of giving birth

I decided not to update my thread over on and instead focus my attention on sot for now on... aren't you lucky?

Anyway, I got into homebrewing a little over a month ago and have made a successful batch (first ever) of a belgiun white. A typical batch yields 2 cases of 12oz bottles... I'm down to a little under a case worth.

After I bottled that I went right into brewing an irish stout... its a little early to be drinking it (needs another 4-5 days bottled) but I just finished, with minor help, a 22oz bottle of the stuff.

It is fucking delicious... this isn't a guiness type of stout, this has flavor. Nice malty touch w/ coffee flavors finished with a slight bitterness from the hops.

What methods did you use? Writeup maybe? I've brewed my own shit, but that was with Mr. Beer...I'm guessing your shits a bit more complicated.

not complicated at all really... just need to keep things sanitized through out the process and keep the liquid from aerating after fermentation.

step one: make wort (lots of boiling and such, different for each beer style)
step two: cool wort quickly. Ice bath it in the sink, keep it covered at this point.
step three: pour wort into fermentation bucket, pitch yeast, close bucket
step four: let sit for 2 weeks to ferment
step five: create bottling "food". 2 cups water, 3-4oz sugar. add to bottling bucket
step six: siphon, flat, beer to bottling bucket
step seven: siphon beer into bottles and cap
step eight: let sit for 2 weeks in the bottle
step nine: enjoy

I have two 6 gallon food grade buckets, bottle capper, bottles, etc. I just picked up a 6 gallon glass carboy (google it) so I can make two batches at once. I purchased a real starter kit and nice brew kits from a homebrew store.

so far i've done the belgian white, the stout, and once I move I'll be making an apple cinnamon weizen. You can't wait long to start making your own recipes... its addicting. Christmas is going to see a chocolate peppermint stout
